Lotte Tour Development announced on the 8th that it has opened the Shanghai specialty restaurant "Blue Dragon" on the 38th floor of the Grand Hyatt Jeju in the Jeju Dream Tower complex.
Lotte Tour Development has recruited veteran chef Wu Yuan, who has 17 years of experience in five-star hotels in China and upscale restaurants in Shanghai, as the executive chef for the opening of Blue Dragon. With the opening of Blue Dragon, the Jeju Dream Tower now boasts a restaurant showcasing all four major Chinese cuisines, including "China House," where guests can enjoy Peking duck, the representative dish of Beijing cuisine, and Cantonese dim sum, as well as "Hotpot," where Sichuan hot pot can be savored.
At Blue Dragon, premium Korean ingredients such as Jeju black pork and seafood will be used to present a modern interpretation of authentic Shanghai cuisine called "New Shanghai Cuisine." The restaurant aims to recreate local flavors based on traditional Shanghai cooking methods symbolized by a deep and rich flavor of soy sauce that combines sweetness and saltiness, a shiny scarlet color from the use of oil, and complex flavors influenced by nearby regions such as Suzhou and Zhejiang.
In addition to enjoying meals with a sky view from the tallest point in Jeju, casual Chinese menu items will be launched sequentially at reasonable prices. A representative from Lotte Tour Development noted, "With 153 direct flights weekly from 11 major Chinese cities, including Shanghai and Beijing, the number of foreign customers, including those from China, is on the rise," and added, "We are working hard to strengthen our food and beverage operations for both domestic and international customers."
