On the T-Cast E Channel's 'Ryu Student Eonnamseon', Ryu Soo-young, Yoon Kyung-ho, and Ki-hyun learned the cooking method for bacalhau (cod) at a restaurant in Porto and presented their first 'Ryu Student Recipe'.
In the second episode of T-Cast E Channel's 'Ryu Student Eonnamseon' broadcasted on the 24th, a crisis struck Yoon Kyung-ho, who confidently said, "I think I can balance the flavors well." Yoon Kyung-ho came up with 'bacalhau egg soup' inspired by 'hwangtae haejangguk' and planned a meal featuring 'radish greens seasoning' made from the radish greens that accompanied the bacalhau dish, as well as potato rice. To assist Yoon Kyung-ho, who was still awkward at cooking, Ryu Soo-young volunteered to prepare the potatoes. Yoon Kyung-ho added radishes and onions to the task list, citing his older brother's kindness, saying, "Brother, we promised to overcome this together during tough times." Ryu Soo-young replied, "I'm having a hard time too" while gently helping him, creating a warm atmosphere.
The potato rice, with a subtle and nutty sweetness, was completed with a topping of sweet and salty radish greens seasoning. However, while the radish greens seasoning potato rice received rave reviews, the egg soup faced criticism with comments like, "Why is this so fishy?" Ryu Soo-young sarcastically remarked, "It's as if a live cod is swimming in it." Yoon Kyung-ho openly confessed, "I also felt that something went wrong when I tasted it," which drew laughter. In response, the three brothers compared the egg soup's fishiness by tasting freshly thawed bacalhau. They found the taste of the uncooked bacalhau less fishy than the egg soup, and Ryu Soo-young and Ki-hyun expressed heated complaints to 'egg soup creator' Yoon Kyung-ho. Yoon Kyung-ho exclaimed, "Are you saying I added a fishy taste?!" resisting fiercely, but eventually showed deep remorse in an interview with the production team, causing everyone to burst into laughter. Meanwhile, Ki-hyun prepared 'Baek-kimchi Tartare' with a mix of truffle oil and sesame oil. The older brothers, who had been overly enthusiastic before tasting it, praised it, saying it had a delightful flavor.
Ryu Soo-young prepared 'Cream Cod Pasta' inspired by bacalhau gratin. He fried cannelloni pasta, thicker than a finger, to create a crispy texture and made a rich cream base by chopping bacalhau into a base infused with his homemade BASS oil. He stuffed the fried cannelloni pasta with the cream base, decorated it with thinly sliced scallions, and drizzled it with freshly made peri peri sauce to complete 'Ryu Soo-young's Cream Cod Pasta'. Ki-hyun remarked, "The flavor keeps changing in my mouth. The taste of bacalhau is even present."
The next day, Yoon Kyung-ho and Ki-hyun, with their hungry stomachs after jogging, set out early in the morning toward a popular breakfast spot frequented by the MZ generation. Lines formed with customers eager for 'Bipana', a sandwich made with thin pork stewed in spicy sauce, and 'Francesinha', a representative dish of Portugal filled with a variety of meats and cheeses.
Ki-hyun took a bite of the Bipana, which had a familiar aroma reminiscent of stir-fried pork, and gave an honest assessment, saying, "It's stir-fried pork without vegetables, but the sweetness is missing." He exclaimed about the intuitive flavor of the Bipana sandwich, stating, "The taste is closer to Ronaldo than Messi. It's like taking a mid-range shot without dribbling." Meanwhile, Yoon Kyung-ho tasted the Francesinha. He described, "I expected it to be sweet with the smell resembling Tteokbokki broth. It’s not sweet, but it has a strong cheese flavor that is spicy. It's unfamiliar yet delicious," giving it a thumbs up. Ki-hyun commented, "It’s like the taste of dipping bread into a salty army stew that has thickened."
Meanwhile, unlike his younger brothers, Ryu Soo-young stormed into the kitchen of Chef Hui Paola, who has maintained a Michelin 2-star for seven consecutive years in Portugal. Chef Hui Paola welcomed Ryu Soo-young and served him seafood-based kimchi pancake tacos, reinterpreting the kimchi pancake. Surprised by how delicious the kimchi pancake taco prepared by Chef Hui Paola, who is so interested in Korean cuisine that he even makes kimchi himself, Ryu Soo-young exclaimed, "Are you telling me you can create something this tasty?" Then it was Ryu Soo-young's turn to offer 'Korean cuisine', and he attempted to escape, saying, "I can’t cook," which caused laughter.
